Truffle Tremor - Cypress Grove, Quarter Pound

Mary Keehn of Humboldt County has been making goat cheese in California for years, and Truffle Tremor is what happens when black truffles meet that paste. It is pasteurized goat cheese with a tangy, lactic, cakey texture and a heady fungal earthiness running through it.

Why you'll love it

  • Black truffles — a handful of truffle goes into each batch, and it perfumes the whole paste.
  • Cakey texture — crumbly and tender, with that fine, dry break that good goat cheese has.
  • Tangy and lactic — bright, cultured goat flavor underneath the truffle.
  • Bloomy rind — a soft white coat around a firm, dense interior.
  • Cypress Grove — made in California by one of the pioneering American goat cheese makers.

How to enjoy Serve it at room temperature with plain crackers so the truffle is not competing with anything, or crumble it warm over pasta. A dry sparkling wine or a lightly oaked white works.

An American original, and the truffled cheese we reach for when the board needs a centerpiece.
