Tasting Notes: Deep garnet with an opaque core. Expressive aromas of blackcurrant, blackberry, and dark plum weave with cedar, pencil shavings, and a hint of dried sage. The palate is full-bodied yet fresh, delivering concentrated dark-fruit flavors supported by fine-grained tannins and vibrant acidity. Nuances of cocoa, graphite, and sweet tobacco emerge mid-palate, culminating in a long, savory finish with lingering spice and minerality.
Notes: Two Mountain Cabernet Sauvignon 2022 is sourced from estate vineyards—Copeland and Brothers—in the rain-shadow of Mount Adams at 270–320 m elevation. Rocky silt-loam soils and wide diurnal swings build structure and phenolic ripeness. Fermented in small lots with daily pump-overs; aged 18 months in 225 L French (65 %) and American (35 %) oak barrels, about one-third new, to integrate tannins while preserving fruit purity. Certified Salmon-Safe and sustainably farmed; bottled unfined and unfiltered.
Food Pairing: Pairs beautifully with grilled rib-eye, rosemary lamb shanks, mushroom-blue cheese burgers, braised short ribs, or aged Cheddar. The wine’s freshness also complements herb-roasted vegetables and lentil stew.
Winery Story: Two Mountain Winery was founded in 2002 by brothers Matthew and Patrick Rawn on land farmed by their family since 1951 near Zillah, Washington. Named for the twin peaks—Mt. Adams and Mt. Rainier—that dominate the Yakima skyline, the estate focuses on sustainable viticulture, precision irrigation, and canopy management to craft balanced, site-expressive wines. With estate control from vine to bottle, the Rawns emphasize minimal intervention in the cellar to let their high-altitude, sun-soaked vineyards shine.
