Tasting Notes: Deep garnet with an inky core. The bouquet is intense and layered, revealing aromas of blackcurrant, cassis, and dark cherry intertwined with cedar, graphite, and hints of dried herbs. The palate is full-bodied and structured: ripe black-fruit flavors mingle with notes of cocoa, tobacco, and subtle vanilla. Firm yet polished tannins and bright acidity deliver depth and balance, culminating in a long, savory finish marked by spice and mineral nuances.

Notes: Thelema Mountain Vineyards Cabernet Sauvignon is sourced from high-elevation, north-west–facing parcels on decomposed granite soils that yield small, concentrated berries. Fermentation takes place in small open tanks with regular punch-downs; the wine then ages 18 months in 225 L French oak barrels (≈50 % new) to integrate tannins and add complexity without overshadowing the vibrant fruit.

Food Pairing: Pair with grilled rib-eye, rosemary-lamb chops, venison, rich mushroom ragù, or aged Cheddar. Also excels alongside dark-chocolate desserts featuring berries.
