The nose is vivid and layered, offering classic Marlborough aromas of passion-fruit, lime zest, and gooseberry alongside elderflower, jalapeño, and crushed stone. The palate is dry, crisp, and mouth-watering: zesty citrus and tropical fruit ride on electric acidity, with a subtle saline snap and a long, mineral-charged finish.
Notes: Rock Ferry “3rd Rock” Sauvignon Blanc 2023 is certified organic and biodynamically farmed. Fermentation is primarily in stainless steel to retain purity, with a small portion wild-fermented in seasoned French barrels for texture and complexity. A brief élevage on fine lees adds creaminess while preserving the variety’s vibrant aromatics.
Food Pairing: Ideal with freshly shucked oysters, green-lipped mussels, ceviche, goat-cheese salads, asparagus, and Thai-inspired dishes featuring lemongrass or chili. A lively aperitif as well.
