Tasting Notes: Lively bubbles lift aromas of lime, white peach and wet stone. On the palate it is energetic and bone-dry in character, with the same clarity and varietal precision as the still Riesling, and a crisp, refreshing finish.
Notes: Made in the same style as the still Riesling: extended skin contact before pressing, aging on fine lees until shortly before dealcoholization, then gentle removal of the alcohol by reverse osmosis. The sparkle adds lift and energy while preserving freshness.
Food Pairing: As an aperitif, with oysters, smoked salmon, fried foods, or a cheese board.
Winery Story: Quelle is the non-alcoholic wine line from Haus Rothenberg, a new project built on roughly 10 hectares of mature Nahe vineyards acquired from the long-established Sitzius estate. Georg Rumpf (of Weingut Kruger-Rumpf) oversees the vineyards and cellar, and Julia Rumpf leads the project. The philosophy is simple: rather than removing alcohol from a finished wine, they grow and vinify base wines specifically designed for premium dealcoholization, so the wines stay balanced without masking sugar. The alcohol is removed by reverse osmosis, a gentle cold process that preserves aromatics, phenolics, and natural acidity. All vineyards are farmed organically and sustainably, in transition toward certification.
