Grape(s): Corvina, Rondinella and Molinara
Location: Valpolicella Classico, Veneto, Italy
Tasting Notes: Deep ruby red. Intense, elegant nose of ripe cherry, dried plum and spice with a hint of cocoa. Full and structured on the palate, with rounded tannins and a long, warm finish.
Notes: A Ripasso made the old-school way, re-fermenting the Valpolicella on the skins left over from Amarone, which builds body, colour and alcohol. Aged in a mix of large Slavonian oak and smaller French barrels before release.
Food Pairing: Roasts and braised meats, game, rich pasta with ragu, and aged cheese.
Winery Story: Nicolis is a family estate in San Pietro in Cariano, in the heart of the Valpolicella Classico zone, working hillside vineyards above the Marano valley. The house leans toward a powerful, Amarone-influenced style, and Seccal is its traditional Ripasso.
