Alcohol: 12.0 %
Grape(s): 100 % Pinot Noir
Location: Monticello, Virginia, USA
Tasting Notes: Pours a hazy, pale coral pink with a soft, frothy mousse. The nose is bright and rustic, offering aromas of wild strawberry, under-ripe raspberry, and citrus zest, layered with a distinct "leesy" character reminiscent of fresh bread dough. On the palate, the wine is bone-dry and energetic, with a light prickle of natural carbonation. Flavors of tart red fruit and watermelon are balanced by a refreshing, saline minerality on the finish.
Notes: This "PNT" (Pinot Noir) is a Pétillant Naturel, or "Pet Nat," made using the Méthode Ancestrale. Unlike Champagne, it is bottled before its primary fermentation is complete, trapping the CO2 naturally without the addition of secondary sugars or yeasts. It is bottled with its lees and remains undisgorged, which accounts for its signature cloudy appearance and complex texture. The release emphasizes freshness and the raw, vibrant character of Pinot Noir.
Food Pairing: A perfect match for fried chicken, salty snacks like potato chips or popcorn, fresh oysters, or a classic Eggs Benedict. Its high acidity and bubbles also make it a great palate cleanser for soft, creamy cheeses.
