Tasting Notes: Full of finesse, evoking ripe cherries, freshly turned soil, and earth. Well-rounded and fresh, it flows across the palate with a light but intense fruit character. The finish is relishing, marked by cherry stones, spice, and a bewitching earthy flavour.
Food pairing: Mixed grills, game, pork roast with prunes, grilled flank of beef, cold meat and cheese platters.
Winery Story: Winemaker and grower Jeff Carrel studied oenology and vinified across France (Loire, Alsace, Languedoc), later serving as Technical Director for a Bordeaux merchant before leading his own projects. Working mainly in Languedoc-Roussillon (and in Bordeaux, Beaujolais, Burgundy), Jeff crafts precise, original wines that convey strong sense of place and value. He collaborates with organic growers and produces both domaine wines and the By Jeff Carrel labels.
