Notes: A combination of whole-cluster and destemmed fruit, fermented in small open-top fermenters as individual clonal lots and aged about 17 months in French oak, roughly a third new, with no fining or filtration.
Food Pairing: Roast chicken, turkey, duck, salmon and mushroom dishes.
Winery Story: Bill Wathen and Dick Dore founded Foxen in 1985 at the historic Rancho Tinaquaic in northern Santa Barbara County, making small-production, sustainably farmed, vineyard-focused wines with a minimalist approach.
