Notes: This 100% Cabernet Sauvignon is sourced from 13 individual vineyard blocks across four prestigious Red Mountain vineyards: Quintessence (57%), Fidélitas Estate (18%), Shaw (18%), and Dalee (7%). The diversity of vineyard sites, vine ages, slopes, and soils contributes remarkable depth and complexity. The wine was aged for 18 months in oak, including 36% new French oak and 4% new American oak, with a portion fermented in oak tanks and large-format barrels. Concentrated yet beautifully balanced, this Cabernet Sauvignon can be enjoyed now with at least 30 minutes of decanting or cellared through 2035. Production was limited to 1,500 cases.
Food Pairing: Perfect with grilled ribeye steak, filet mignon, braised short ribs, roasted lamb, and hearty beef stews. Its rich fruit and polished tannins also complement aged Cheddar, Gouda, Parmigiano Reggiano, and other firm, flavorful cheeses. An excellent choice for grilled meats and special occasion dinners.
