Tasting Notes: "Elle Aime" ("She Loves") is a vibrant, high-acid blend of Pinot Noir and Chardonnay; tropical red fruit and tangy energy over a harmonious, fresh finish.
Notes: Sourced from limestone-and-marl plots planted side by side in Arbois; extended semi-carbonic maceration on whole clusters, wild ferment, unfined and unfiltered.
Food Pairing: Duck, roast chicken, or charcuterie; also delicious served lightly chilled.
Winery Story: Domaine de l'Octavin is the project of Alice Bouvot, a former opera singer turned winemaker, in Arbois, Jura. Known for playful, low-intervention cuvées made from both her own vines and purchased fruit (négoce), her wines carry hand-drawn garden-gnome labels and a philosophy of minimal handling: native yeasts, little to no added sulfur, and unfined, unfiltered bottling.
