Tasting Notes: Pale gold with persistent, fine mousse. Delicate aromatics of lemon peel, green apple, white blossom and toasted brioche with a chalky, saline undercurrent. The palate is focused and energetic: bright citrus and ripe pear framed by lively acidity, creamy mid-palate texture from extended lees aging, and a long, mineral-driven finish with citrus pith and a hint of toasted almond.
Notes: Single-vineyard expression from the 1er Cru village of Cuis; base wines vinified in stainless steel and neutral oak with careful malolactic management. Extended lees aging in bottle contributes creaminess and autolytic complexity while the NV blend preserves freshness across vintages. Low dosage to emphasize purity, minerality, and site character. Bottled Brut NV for ready approachability with good cellar potential.
Food pairing: Fresh oysters, lobster with beurre blanc, smoked trout, soft-ripened cheeses, roast chicken with lemon, or delicate shellfish pasta.
Winery Story:Pierre Gimonnet is a multi‑generation, grower‑producer based in Cuis in the heart of the Côtes des Blancs, devoted almost exclusively to Chardonnay. The family combines meticulous vineyard stewardship—parcel-level selection, low yields, and traditional Guyot pruning—with careful, low‑intervention cellar practices to showcase terroir clarity. Grapes are often harvested by hand at optimal ripeness from chalky, shallow soils that give the wines their signature mineral lift
