Tasting Notes: Pale gold with a fine, persistent mousse. The nose is elegant and expressive, showing crisp yellow apple, stone fruit, dried white flowers, freshly baked bread, mandarin oil, and chalky mineral notes. The palate is full-bodied yet precise, with a creamy texture, high tension, and a long, dry finish marked by citrus zest, white peach, and saline minerality.

Notes: This cuvée comes from four Grand Cru vineyards in the Côte des Blancs: Chouilly (40 %), Cramant (33 %), Mesnil-sur-Oger (20 %), and Avize (7 %). About one-third of the wine was fermented and aged in oak casks, and the 2008 vintage spent around 11 years on lees before release. The dosage is 7 g/l, and the wine was disgorged in October 2020 or May 2021 depending on the bottling reference.

Food Pairing: Excellent with oysters, shellfish, sashimi, roast poultry, creamy seafood dishes, and refined aperitif fare.

Winery Story: Billecart-Salmon is a family Champagne house in Mareuil-sur-Aÿ known for precision and finesse. Cuvée Louis Salmon is one of its prestige Blanc de Blancs bottlings, named for co-founder Louis Salmon and focused on Chardonnay from top Côte des Blancs crus.
