Alcohol: 14.5%

Grape(s): Cabernet Sauvignon blend

Location: Coombsville, Napa Valley, California, USA

Tasting Notes: Deep garnet. Blackberry, cassis and dark cocoa with warm spice on the nose. Smooth and elegant, with restrained dark fruit, polished tannins and a long, marathon-like finish.

Notes: From Palmaz Vineyards' Cedar Knoll block in the cool Coombsville appellation, aged in French oak for 18 months. Blend: about 83% Cabernet Sauvignon, with Merlot, Petit Verdot and Cabernet Franc.

Food Pairing: Grilled ribeye, braised short rib, lamb chops and aged cheddar. Decant for an hour before serving.

Winery Story: Palmaz Vineyards is a family estate carved into Mount George in Coombsville, famous for its extraordinary underground fermentation cave. Cedar Knoll is its more approachable, polished expression of Napa Cabernet, here with a few years of bottle age.
