Tasting Notes: Brilliant straw yellow with a fine, persistent perlage. The aromas open with lemon zest, green apple, and white peach, followed by hints of acacia blossom, brioche, and hazelnut. The palate is crisp and lively, offering creamy mousse, vibrant acidity, and flavors of citrus, pear, and subtle pastry, finishing long and saline.

Notes: Cantina Della Volta “Mattaglio” Brut NV spends around 24 months on the lees, gaining complexity while retaining bright fruit and precision. The grapes come from hillside vineyards on calcareous clay soils that lend minerality and finesse.

Food Pairing: Ideal as an aperitif and superb with oysters, sushi, tempura, seafood risotto, and light poultry dishes. Also pairs well with young cheeses and cured meats from the region.

Winery Story: Cantina Della Volta, led by Christian Bellei in Bomporto near Modena, revives a family tradition dating back to 1920. The estate specializes in metodo classico sparkling wines—both Lambrusco di Sorbara and Burgundy varieties—crafted with meticulous attention to vineyard selection, long lees aging, and minimal dosage to showcase purity, elegance, and the unique character of Emilia-Romagna’s terroir.
