Grape(s): Saperavi
Location: Caucasus Valley, Georgia
Tasting Notes: Pale salmon-pink. Strawberry, pomegranate and white peach on the nose, with a faint herbal lift. Semi-dry on the palate: a touch of sweetness up front, then bright acidity and a soft, refreshing finish.
Notes: Saperavi is Georgia's great red grape, taken off its skins early here to make a rose. The wine keeps a little residual sugar, a style Georgians have favored for generations.
Food Pairing: Salads with fruit, grilled vegetables, mildly spiced chicken, and soft sheep's milk cheese. Also very good on its own, well chilled.
Winery Story: From the same Racha-Caucasus project as our Khvanchkara, made with local Georgian varieties and traditional methods rather than international grapes.
