Tasting Notes: A bone-dry sparkling wine with zero dosage. Citrus and almond flour on the nose, with crisp apple and pear, a delicate mousse and a clean, slightly bitter grapefruit finish.
Notes: A traditional-method sparkler built on Mauzac, the grape native to Limoux, with smaller parts Chardonnay and Chenin Blanc. No dosage is added at disgorgement, so the wine shows pure fruit and acidity.
Food Pairing: Oysters, shellfish, fresh goat cheese, charcuterie and fried appetizers.
Winery Story: Antech has made sparkling wine in Limoux for generations, and the family helped define the Blanquette de Limoux appellation, often cited as one of the oldest sparkling wine regions in the world. The estate farms with sustainable methods and is Terra Vitis certified.
