Food pairing: Roast lamb, grilled pork, tapas (chorizo, manchego), tomato-based dishes, roasted vegetables, moderate-aged cheeses

Winery Story: Acentor is a Rioja project focused on varietal expression of Garnacha from selected parcels across Rioja subzones. The team emphasizes low-yield viticulture—old vine selection, green harvesting and minimal intervention in the cellar. Grapes are hand-harvested, fermented parcel-by-parcel using indigenous yeasts, and aged carefully in a mix of neutral oak and alternative vessels to retain freshness while adding structure. Quality control includes small-batch vinifications, tight vineyard-to-winery traceability and sustainable practices in the vineyard; the result is a transparent, terroir-driven Garnacha that showcases Rioja’s warmth and old-vine concentration.
