Alcohol: 12%

Grape(s): 100% Riesling

Location: Mosel, Germany

Tasting Notes: Pale lemon with green highlights. Lifted aromatics of lime zest, green apple, white peach, and wet slate. The palate is crisp and dry with piercing acidity, concentrated citrus and orchard-fruit flavors, bright mineral drive, and a clean, stainless-steel-fresh finish with a hint of white pepper.

Notes: Fruit sourced from steep, slate-rich Mosel parcels and hand-harvested to preserve purity. Fermented cool and slowly in stainless steel to emphasize primary fruit and terroir; bottled trocken (dry) to showcase the tension between lively acidity and stony minerality. Minimal sulfur and gentle handling throughout to retain freshness.

Food Pairing: Shellfish, grilled salmon, roast pork with herbs, sushi, light vegetable dishes, and tangy goat cheese. Also excellent as an aperitif.

Winery Story: Selbach-Oster is a respected, family-owned Mosel estate based in the steep-sloped villages of the Middle Mosel. The house has built its reputation on meticulous vineyard work in very steep, slate-dominated sites where microclimate and soil impart a distinct minerality to the grapes. Vines are managed with careful canopy work and selective hand-harvests to achieve optimal ripeness and balance.

In the cellar the team favors low-intervention techniques tailored to Riesling: cool, controlled fermentations to preserve aromatics, stainless-steel and neutral vessels to maintain clarity of fruit, and restrained sulfite use for stability while protecting freshness. The estate produces a range from delicate dry Rieslings to richer off-dry and noble-sweet bottlings, but its trocken wines emphasize precision, saline minerality, and food-friendly acidity that express the slate terroir. Sustainability, long-term site stewardship, and close attention to vintage variation guide their decisions, resulting in wines that consistently reflect place and vintage with elegant focus.
