Tasting Notes: A skin-contact, orange-style white made from Sylvaner; golden-amber hue with saline, tangy character and an easy-drinking freshness that's deceptively different from typical Sylvaner.
Notes: Whole-bunch fermented on skins in tank; low-intervention négoce cuvée from purchased Alsace fruit.
Food Pairing: Charcuterie, aged cheeses, or spiced and aromatic dishes.
Winery Story: Domaine de l'Octavin is the project of Alice Bouvot, a former opera singer turned winemaker, in Arbois, Jura. Known for playful, low-intervention cuvées made from both her own vines and purchased fruit (négoce), her wines carry hand-drawn garden-gnome labels and a philosophy of minimal handling: native yeasts, little to no added sulfur, and unfined, unfiltered bottling.
