Notes: Olivares Tinto Monastrell is sourced from old bush vines, some over 50 years old, grown in the unique limestone and clay soils of Jumilla. Hand-harvested grapes undergo a traditional fermentation process, with maceration lasting 15–20 days to extract color and flavor. The wine is aged for 6 months in a combination of French and American oak barrels, enhancing complexity while preserving the varietal character.
Food Pairing: Pairs beautifully with grilled meats, particularly lamb and beef, as well as hearty stews, roasted vegetables, and aged cheeses. Its bold profile also complements spicy dishes and rich pasta sauces.
Winery Story: Bodegas Olivares was founded in 1990 in the Jumilla region, known for its rich viticultural history and unique climate. The estate is committed to sustainable farming practices and focuses on showcasing the Monastrell variety, which thrives in the region’s dry, sunny conditions. With a philosophy rooted in tradition and respect for the land, Olivares produces wines that reflect the authenticity and character of Jumilla, gaining recognition for their quality and value.
