Tasting Notes: Brilliant pale gold with delicate straw-yellow reflections and an elegant stream of fine, persistent bubbles, this beautifully refined Champagne opens with enticing aromas of crisp green apple, ripe pear, fresh citrus, and white stone fruits, complemented by delicate floral notes and subtle hints of freshly baked brioche and toasted biscuits. On the palate, it is wonderfully harmonious, offering layers of juicy orchard fruits, lemon zest, and delicate roasted nuances. A fine, creamy mousse creates a silky texture, while vibrant acidity and subtle mineral undertones provide exceptional freshness and precision. The finish is long, elegant, and beautifully balanced, leaving lingering impressions of citrus, toasted bread, and delicate chalky minerality. A sophisticated Champagne that perfectly captures the finesse, purity, and timeless elegance of Billecart-Salmon.
Notes: Crafted from a carefully selected blend of Pinot Noir, Chardonnay, and Meunier sourced from some of Champagne's finest vineyard sites. The current reference blend consists of 28% Pinot Noir from the Montagne de Reims and Grande Vallée de la Marne, 29% Chardonnay from prestigious Champagne crus, and 43% Meunier from the Vallée de la Marne and the southern slopes of Épernay. The wine is primarily fermented at low temperatures in stainless steel tanks to preserve its delicate fruit aromas, freshness, and purity. More than 50% reserve wines contribute remarkable depth, consistency, and complexity, while an average of 50 months aging on the lees develops its refined mousse, creamy texture, and subtle toasted character. Finished with an Extra Brut dosage, Le Réserve beautifully balances richness, elegance, and refreshing acidity. Presented in a convenient 375ml half-bottle format, it is ideal for intimate celebrations, romantic dinners, thoughtful gifts, or enjoying exceptional Champagne without opening a full bottle. Best served chilled between 46°F and 50°F (8°C–10°C).
Food Pairing: An outstanding Champagne for aperitifs, seafood, and elegant dining. Its vibrant acidity and refined bubbles pair beautifully with freshly shucked oysters, caviar, shrimp cocktail, seared scallops, lobster, and delicate white fish preparations. It is equally delightful alongside smoked salmon, sushi, crab cakes, and roasted chicken with creamy sauces. For cheese lovers, enjoy with Brie, Camembert, aged Comté, Gruyère, or a luxurious triple-cream cheese such as Brillat-Savarin. Its freshness also makes it a wonderful companion to crispy appetizers, savory pastries, and elegant charcuterie selections. The half-bottle size is particularly well suited to an intimate dinner for two or a special celebratory toast.
Winery Story: Founded in 1818 through the marriage of Nicolas François Billecart and Elisabeth Salmon, Champagne Billecart-Salmon is one of the few prestigious Champagne houses to remain family-owned and independently operated for more than two centuries. Located in Mareuil-sur-Aÿ, the estate has built an international reputation for producing exceptionally elegant, precise, and beautifully balanced Champagnes. Now guided by the seventh generation of the family, Billecart-Salmon combines generations of traditional craftsmanship with meticulous vineyard selection and innovative winemaking techniques. The house is particularly celebrated for its slow, low-temperature fermentation methods, which preserve the purity and delicate aromatic expression of its wines. Le Réserve, one of the house's signature cuvées, embodies this philosophy through its harmonious blend of Champagne's three classic grape varieties, extensive use of reserve wines, and extended aging. The result is a Champagne of remarkable finesse, freshness, and complexity, reflecting the timeless elegance and unwavering dedication to quality that have made Billecart-Salmon one of Champagne's most respected producers.
