Tasting Notes: Pale straw yellow with green reflections. Expressive aromas of grapefruit, passion fruit and fresh lime are layered with white peach, elderflower and subtle herbal notes. The palate is zippy and layered, with juicy gooseberry, cassis, white pepper and lemongrass, plus a multifaceted texture, lively acidity and a fresh, animating finish.
Notes: The grapes are harvested by hand in the first three weeks of October and given 12 hours of skin contact before pressing. Fermentation takes place spontaneously in large oak barrels and stainless steel tanks, followed by four months on fine lees. The vineyards sit at about 430–500 m elevation on varied soils including lime marl, gravel conglomerates, sandy soils and shell limestone, which help shape the wine’s freshness and complexity.
Food Pairing: Works well with seafood, grilled white fish, sushi, goat cheese, asparagus, herb-roasted chicken, or light vegetable dishes. It also makes an excellent aperitif.
