The Domain: François Cotat — a 100% organic, single-vineyard domaine in Chavignol, where the Cotat family has farmed Sauvignon Blanc and Pinot Noir on the steep Monts Damnés slopes since WWII. François harvests by hand, more than a week after neighboring estates, maximizing maturity and complexity. Fermentation is natural in barrique; wines are bottled unfined and unfiltered. Single-vineyard cuvées include Les Monts Damnés, Les Culs de Beaujeu, and Grande Côte — wines that age beautifully, evolving from racy and mineral to rich and custard-like over time.
