Alcohol: 14.5%
Grape(s): 100% Nebbiolo
Location: Barolo DOCG, Piedmont, Italy
Tasting Notes: Bright garnet color; elegant aromas of red cherry, rose petals, dried herbs, and subtle spice; medium to full-bodied with firm yet refined tannins, balanced acidity, and flavors of red berries, licorice, and earthy undertones; long, structured finish with classic Barolo depth.
Notes: “Caviot” is Ca’ Viola’s entry-level Barolo, crafted from Nebbiolo grapes sourced from various vineyards across the Barolo zone. Fermentation takes place in stainless steel, followed by aging in large oak casks (botti) to preserve purity of fruit while allowing gentle structure and complexity to develop. The wine is made in a traditional yet precise style, emphasizing balance and drinkability even in its youth.
Food pairing: Ideal with braised meats, osso buco, truffle dishes, mushroom risotto, aged cheeses, and hearty Italian cuisine.
Winery Story: Ca’ Viola was founded by Giuseppe “Beppe” Caviola, a respected winemaker in Piedmont known for his work as both a producer and consultant. Based in Montelupo Albese, the estate focuses on expressing the elegance and accessibility of Nebbiolo while respecting Barolo’s tradition. “Caviot,” named after Beppe’s nickname, reflects his philosophy of producing approachable yet authentic Barolo wines that maintain regional character and finesse.
