After a standard 3-day cold soak for increased color, and an 18 day fermentation with extended skin contact at high temperature between 89-91 degrees for maximum extraction the wine was pressed out around 3 brix into100% French oak barrels. The wine then continued to ferment in barrel over the next 3-4 month until it goes dry.
