The philosophy is simple: rather than removing alcohol from a finished wine, they grow and vinify base wines specifically designed for premium dealcoholization, so the wines stay balanced without masking sugar. The alcohol is removed by reverse osmosis, a gentle cold process that preserves aromatics, phenolics, and natural acidity.
