Through the years of commuting from the Loire Valley to the Languedoc (where Delphine lived), they passed through the Pégairolles Valley, and they knew that was the place. They found eight hectares of vines for sale in 2003, bought them, and five years later they quit their jobs and went all-in on their life project.\u003c\/p\u003e\n\u003cp class=\"p1\" style=\"margin: 0px 0px 11px; font-variant-numeric: normal; font-variant-east-asian: normal; font-stretch: normal; line-height: normal;\"\u003eThe philosophy at Escalette is simply to focus on farming their vineyards as naturally as possible using organic and biodynamic methods and do as little as possible in the cellar, save for a severe triage when the grapes arrive and precision with their winemaking. They use a minimal amount of sulfites in their wines (no more than 30mg\/l, or 30 parts per million total in their reds and a touch more for the whites) and allow them to finish both fermentations without the help of enological products. Sulfites are employed only at the time of bottling so the wine has time to define its personality during its aging process without the abrupt redirection sulfites can impose during this time.\u003c\/p\u003e\n\u003cp class=\"p1\" style=\"margin: 0px 0px 11px; font-variant-numeric: normal; font-variant-east-asian: normal; font-stretch: normal; line-height: normal;\"\u003eThey eschew the use of new oak and use large older wood barrels and tanks to help sculpt their wines grown on limestone and clay soils; they use a range of wood vessels from 500-liter barrels, 20 hectoliter foudre, and 40 hectoliter vertical wooden tanks. In 2018 also added cement vats to the mix with the intention to further protect the high-toned fruit qualities that their cool-climate yields—a stark contrast to the majority of wines grown in the Languedoc, which are often dense, sun-soaked reds and usually uninspiring whites.\u003c\/p\u003e\n\u003cp class=\"p1\" style=\"margin: 0px 0px 11px; font-variant-numeric: normal; font-variant-east-asian: normal; font-stretch: normal; line-height: normal;\"\u003eThe focal red grapes at their estate are Grenache, Syrah, Carignan, Cinsault, and a tiny proportion of Mourvedre, a grape that is more commonly grown in the hotter areas of the south of France due to its need for a long growing season. (In fact, the only Mourvedre on their property was mistakenly sold to them as Cinsault for one of their new vineyard, Les Frieys. But they liked the result of its contribution to the final wine and decided to keep it.) The whites are principally Carignan Blanc, Terret Bourret (an acid beast of a white grape and the backbone of their minerally white Clapas wine), and Grenache Blanc. The principal grapes they use have a natural affinity to demonstrate bright fruit qualities when grown in cooler climates and are fantastic transmitters of terroir specificity—all defining features of the Escalette style.\u003c\/p\u003e\n\u003cp class=\"p1\" style=\"margin: 0px 0px 11px; font-variant-numeric: normal; font-variant-east-asian: normal; font-stretch: normal; line-height: normal;\"\u003eDelphine and Julien maintain more than twenty hectares of vineyards on their thirty-four hectares of land. He believes in protecting ecosystems to preserve the health balance of all vegetation, not only vines. Next up are his Cornas Granit \"30\" and \"60\", designations that refer to the gradient slope of the vineyards. The Granit 30 is concentrated black fruit in a relatively “consumer friendly” style – perhaps a bit more Syrah-ish than Cornas-ish- whereas the 60 is classic Cornas: dense, with aromas of kidney and iron, and a terrific mineral underpinning. Last in the range is very small amount of Cornas \"La Geynale\", a blend of mostly Genale from the 1910 plantings he purchased from his uncle, along with 20-30% from neighboring Reynard. This region is widely recognized as being one of the finest areas for wine production on the planet; thanks in part to its elevation, ancient vineyard sites, and southeastern and southern exposures. The domaine is located further into the hills of the Northern Ardeche in the tiny town of Arlebosc, about a 30-minute drive, winding through the hills from St Joseph. Though it took dynamite and bulldozing to clear twice the amount of limestone, boulders, and glacial scree that is found in neighboring vineyards, he found a great terroir for his grapes. He did not have to look far to find ideal bud wood, either. He sourced his Syrah, Marsanne, and Roussanne cuttings from Gérard Chave and his Cabernet from Domaine Trévallon. Laurent’s South-facing vines get very low yields, normally from twenty to twenty-five hectoliters per hectare. All are pruned in the gobelet style. The simultaneous restraint and power of his wines make them ideal for aging. As for the skeptics, they are currently eating their words. His area in the Languedoc has since become known for producing some of the greatest wines in the region, with the new appellation of Terrasses du Larzac, of which he is technically a part, reaping attention and praise. Much of the confidence that Vaillé and Guibert shared was due to the sublime terroir on ‘Le Tourtou’, a high altitude hill-top with rocky limestone and clay soil. The legend of Daumas Gassac had been built on relatively low-yields from young vines on great terroir, so Laurent Vaillé took this model even further, slashing the yields to as low as 10-25 hl\/ha depending on the vintage conditions.\u003cbr\u003e\u003cbr\u003e\n\u003c\/div\u003e\n\u003cdiv\u003e1992 was an excellent start for Grange des Pères and although there were only 250 cases made, Laurent produced a dense, concentrated wine packed with flavor.
