Geologically, Montgueux represents a continuation of the strata of the Côte de Blancs—and, incidentally, recent scholarship suggests that the hillside that nurtures vines today may once have been the site of the Battle of the Catalaunian Plains, where Aetius and Theodoric defeated Attila the Hun. It was Emmanuel's father Jacques who in the 1950s and 1960s began to replant some of the village's abandoned vineyards, and in 1999, rather than risk losing the estate, Emmanuel quit a successful career in manufacturing to return home. Organic farming, cultivated soils, and harvesting at full maturity are his precepts in the vineyards. In the cellar, the wines ferment in wood and stainless steel, and they're disgorged by hand without dosage.\u003cbr\u003e\u003cbr\u003eThe style is powerful and vinous but also racy and electric. This tasting surveyed Lassaigne's current releases, as well as a mini-vertical of his Clos Saint-Sophie. This site was owned by Marcel Dupont, a friend of the French botanist Charles Baltet, author of an important 19th-century treatise on grafting, and Baltet used the Clos for experiments. Rather than having any kind of ecclesiastical origin, the vineyard in fact takes its name from Dupont's wife. In 1876, Emperor Meiji of Japan sent two Japanese to Montgueux to study viticulture at the Clos Saint-Sophie, and in 1877, they imported 100 vines to Japan. Thus, the first plantings in history of vitas vinifera in Japan—on Mount Fuji—are inextricably linked with this small corner of the Aube. Today, the Clos is owned by the Valton family—better known as the proprietor of childrens' clothing brand Petit Batteau—and Lassaigne makes the wine. When most of Montgueux's vineyards were been abandoned after the War, the Clos was one of the few to remain in cultivation, so it represents a living link with the village's past.\u003cbr\u003e\u003cbr\u003eLike several others growers profiled in this issue, Lassaigne is especially significant because he is shining a spotlight on what is possible in what I've elsewhere called Champagne's \"secret garden\" of hidden producing villages. The négociants were long content to buy grapes from Montgueux without disclosing their origins, and only Charles Heidsieck's former chef de cave, the late Daniel Thibault, ever publicly praised the sector. Yet today, Lassaigne's extraordinary Champagnes are pushing the qualitative boundaries not just of the Aube but of the entire region. They found eight hectares of vines for sale in 2003, bought them, and five years later they quit their jobs and went all-in on their life project.\u003c\/p\u003e\n\u003cp class=\"p1\" style=\"margin: 0px 0px 11px; font-variant-numeric: normal; font-variant-east-asian: normal; font-stretch: normal; line-height: normal;\"\u003eThe philosophy at Escalette is simply to focus on farming their vineyards as naturally as possible using organic and biodynamic methods and do as little as possible in the cellar, save for a severe triage when the grapes arrive and precision with their winemaking. They use a minimal amount of sulfites in their wines (no more than 30mg\/l, or 30 parts per million total in their reds and a touch more for the whites) and allow them to finish both fermentations without the help of enological products. Sulfites are employed only at the time of bottling so the wine has time to define its personality during its aging process without the abrupt redirection sulfites can impose during this time.\u003c\/p\u003e\n\u003cp class=\"p1\" style=\"margin: 0px 0px 11px; font-variant-numeric: normal; font-variant-east-asian: normal; font-stretch: normal; line-height: normal;\"\u003eThey eschew the use of new oak and use large older wood barrels and tanks to help sculpt their wines grown on limestone and clay soils; they use a range of wood vessels from 500-liter barrels, 20 hectoliter foudre, and 40 hectoliter vertical wooden tanks. In 2018 also added cement vats to the mix with the intention to further protect the high-toned fruit qualities that their cool-climate yields—a stark contrast to the majority of wines grown in the Languedoc, which are often dense, sun-soaked reds and usually uninspiring whites.\u003c\/p\u003e\n\u003cp class=\"p1\" style=\"margin: 0px 0px 11px; font-variant-numeric: normal; font-variant-east-asian: normal; font-stretch: normal; line-height: normal;\"\u003eThe focal red grapes at their estate are Grenache, Syrah, Carignan, Cinsault, and a tiny proportion of Mourvedre, a grape that is more commonly grown in the hotter areas of the south of France due to its need for a long growing season. (In fact, the only Mourvedre on their property was mistakenly sold to them as Cinsault for one of their new vineyard, Les Frieys. But they liked the result of its contribution to the final wine and decided to keep it.) The whites are principally Carignan Blanc, Terret Bourret (an acid beast of a white grape and the backbone of their minerally white Clapas wine), and Grenache Blanc. Stephen refuses to irrigate his vines, making them dig for their needs. The soils are cultivated in the tradition of pre-1940s agriculture. No outside fertilizers, synthetic or otherwise, are used. His methods are even more organic than what the certified organic rules require. The vineyard floor is intensively managed for an abundant life. This means letting the wild in while contributing species enhance vine health, insect habitat, and diversity. Returning livestock to this mix is essential: a flock of Katahdin\/Dorper crosses is the cornerstone of fertility management. The Hagens use intensive rotational grazing to cycle nutrients from diverse cover crops to the vines. Several years of this practice have led to a vineyard that needs no other fertilizer, creating wines that are truly site-specific. We are calling Antiquum organic here above in the icons, but this estate is beyond organic, and even beyond biodynamic the way that Hagen is farming and creating wine.
