An oak forest cut down between 1490 and 1542 was replaced by “plantings of vines and trees”, and the old name “Bosco di Gica” (“Gica Wood”) no longer seemed appropriate. The new name, “Zardin” (“Garden”), meanwhile, was perfectly suited to the charm of this rediscovered land. In a land register entry of 1717, it was changed to “Zardini” and subsequent Napoleonic and Austrian maps gave it the name of “Giardino”. The medieval intuition regarding the innate qualities of this land for wine growing was reflected in the subsequent viticultural approach. This is difficult territory, but one which is generous to those who dedicate their energies to its steep slopes. The soil is chalky, lean, and shallow, lying directly on the bedrock, which emerges in places. The vines cling to chestnut poles in south-facing parallel rows, echoing the typical uneven contours of these slopes. It was Emmanuel's father Jacques who in the 1950s and 1960s began to replant some of the village's abandoned vineyards, and in 1999, rather than risk losing the estate, Emmanuel quit a successful career in manufacturing to return home. Organic farming, cultivated soils, and harvesting at full maturity are his precepts in the vineyards. In the cellar, the wines ferment in wood and stainless steel, and they're disgorged by hand without dosage.\u003cbr\u003e\u003cbr\u003eThe style is powerful and vinous but also racy and electric. This tasting surveyed Lassaigne's current releases, as well as a mini-vertical of his Clos Saint-Sophie. This site was owned by Marcel Dupont, a friend of the French botanist Charles Baltet, author of an important 19th-century treatise on grafting, and Baltet used the Clos for experiments. Rather than having any kind of ecclesiastical origin, the vineyard in fact takes its name from Dupont's wife. In 1876, Emperor Meiji of Japan sent two Japanese to Montgueux to study viticulture at the Clos Saint-Sophie, and in 1877, they imported 100 vines to Japan. Thus, the first plantings in history of vitas vinifera in Japan—on Mount Fuji—are inextricably linked with this small corner of the Aube. Today, the Clos is owned by the Valton family—better known as the proprietor of childrens' clothing brand Petit Batteau—and Lassaigne makes the wine. As Prévost had no cellars of his own, Selosse offered to share a corner of his cellars in Avize: Prévost made all of his wines there until the 2002 vintage, which was vinified in his new cellars in Gueux but later bottled in Avize. Since 2003, all of the production has taken place in Gueux.  Prévost’s two hectares of 40-year old Meunier vines are all located within a single vineyard, Les Béguines, located in the village of Gueux. He does have an additional 20 ares in a parcel directly adjacent to Les Béguines, co-planted with Meunier, chardonnay, pinot noir, and pinot blanc, but as these vines are still young, they are currently blended with the Meunier. It’s possible, however, that they may be used to produce a different cuvée in the future. The soils in this area, just west of Reims, are a mix of sand and calcareous elements, due to being seabed around 45 million years ago, and they’re filled with a number of tiny marine fossils leftover from this period. Jean-Hervé, once the cellar master, now primarily runs the commercial aspects of the business, while his younger brother Laurent runs the production side and has taken the role of chef de cave. In a given year, Champagne Jacquesson farms between 69 and 76 acres in the grand cru villages of Aÿ, Avize, and Oiry, and in the premier cru villages of Hautvillers, Dizy, and Mareuil-Sur-Aÿ. The acres vary because the house owns 69 acres with the option to take farming contracts on as many as 7 more, and Jacquesson does all the farming on whatever it contracts for.\u003c\/p\u003e\n\u003cp\u003eSustainable practices are the norm here, and one-third of Jacquesson’s vineyards are certified organic. The brothers use vertical presses rather than more abusive horizontal presses.
