Five generations of the Ameztoi family have tended vines and made wines in the area.\u003c\/p\u003e\n\u003cp\u003eThey own 40 hectares of vineyards and rent an additional 10 hectares. Most of the plots enjoy fabulous sea views framed against the picturesque fishing village of Getaria. Two indigenous grape varieties are grown: the white Hondarrabi Zuri and the red Hondarrabi Beltza (zuri means white in Basque and beltza is red).\u003c\/p\u003e\n\u003cp\u003eAmeztoi has developed its own selection of yeasts. The style of the wines is in line with the majority in the DO Getariako Txakolina —low alcohol (usually between 10,5% and 11,5% vol.) with petillance, in contrast with txakoli from the neighboring provinces of Bizkaia and Álava, with barely a trace of carbon dioxide. Ameztoi keeps wines in hermetically sealed stainless steel tanks at 7ºC all year long to preserve the spritz.\u003c\/p\u003e\n\u003cp\u003eBeyond the traditional styles, the winery produces an oak-aged txakoli, Kirikilla Ameztoi (around €13), as well as a low alcohol white called Ameztoi 9.6, which we found of little interest given the presence of residual sugar.\u003c\/p\u003e\n\u003cp\u003eThe most original wine in the range is probably the rosé Ameztoi Rubentis (100,000 bottles, €8), with equal parts of Hondarrabi Zuri and Hondarrabi Beltza that are blended at the beginning of the winemaking process. Bunches undergo a short maceration before they are pressed. The wine displays the slightly wild, lively character of the red Hondarrabi Beltza variety. There is also the single-varietal red Ameztoi Stimatum. But when phylloxera crossed the border from France into Spain, the family was dealt a double blow. The pest completely destroyed their vineyards and their savings when concerns over the louse caused a run on the region’s largest banks. Faced with starting over, Joan Esteve Marcè saw the opportunity in hardship and developed a plan to pull the family back from the verge of bankruptcy. He traveled to France in search of phylloxera-resistant vines. When he returned to the estate, all of the Esteve Family vineyards were replanted with new rootstocks immune to the pest. His calculated gamble paid off, and he spent the rest of his life modernizing the winery and increasing production. It is this independence and originality that has made Clos Cibonne one of the most sought-after cult wineries in France, with demand greatly outpacing their artisan-scale production.\u003c\/p\u003e\n\u003cp\u003eThe modern era at Clos Cibonne property began in 1793 when the Roux family purchased it from Jean-Baptiste de Cibon, a captain in the royal marines of Louis XVI. Jean-Baptiste de Cibon served under the command of Lafayette in the American Revolutionary War against the British, playing an instrumental role in that history. Jean-Baptiste moved his family to Gibraltar at the outset of the French Revolutionary War, transferring ownership to the families who had traditionally farmed the estate; the Roux family was one of those farmers. Some bottles still survive at the estate from Marius Roux, who made wines under the Château Cibon label in the late 1800s at the property.\u003c\/p\u003e\n\u003cp\u003eIn 1930, André Roux (son of Marius) was the great architect of the modern winery in order to pursue his goal of producing top-quality wines at the estate. This revival ignited an era of fame for the rosés of Clos Cibonne, which led to their inclusion in a 1950’s classification of 18 Cru Classés in Côtes de Provence. Olivier has focused his energy on impeccable viticulture, after transitioning to organic viticulture for the last decade, they are now certified organic since the 2019 vintage.
