Domaine Stéphane et Bénédicte Tissot is in Arbois, a commune located within Jura, about 30 miles west of Switzerland. His famed Geynale parcel is comprised exclusively of old vines planted in 1910. Vincent Paris is without a doubt one of the rising stars of the Rhône Valley.\u003c\/p\u003e\n\u003cp\u003eCo-president of the appellation of Cornas with Jacques Lemencier, Vincent owns eight hectares of vineyards and produces about 2,500 cases per year, of which 1,600 are Cornas. He inherited most of his vines from his grandfather (some of which are 90 years old) and also rented, then purchased, vines from his uncle, including \"Geynale\" in the Cornas amphitheatre. They are located at different places primarily along the southeast facing Cornas slope and a small lot in Saint Joseph.\u003c\/p\u003e\n\u003cp\u003eVincent is convinced that the forests surrounding the appellation must remain wild and uncultivated. He believes in protecting ecosystems to preserve the health balance of all vegetation, not only vines. He is meticulous in the vineyards, and prunes to only four bunches of grapes per vine (the norm is between five and seven), which concentrates the vines' growing power and cuts down on the need for green harvests. In the cellar he ferments at relatively low temperatures and matures his wine in oak barrels for up to 12 months.\u003c\/p\u003e\n\u003cp\u003eVincent's \"little wines\" are a Syrah VdP and Crozes-Hermitage, which he began to produce in the hope of accommodating more clients after years of having no Saint Joseph or Cornas left to sell to new, interested customers. His Saint Joseph red is made from vines planted in the 1990s, and is vinified half in used barrel and half in tank. Next up are his Cornas Granit \"30\" and \"60\", designations that refer to the gradient slope of the vineyards. The Granit 30 is concentrated black fruit in a relatively “consumer friendly” style – perhaps a bit more Syrah-ish than Cornas-ish- whereas the 60 is classic Cornas: dense, with aromas of kidney and iron, and a terrific mineral underpinning. Last in the range is very small amount of Cornas \"La Geynale\", a blend of mostly Genale from the 1910 plantings he purchased from his uncle, along with 20-30% from neighboring Reynard. The average age of the vines is 60 years and everything is carried out according to organic principles: the grapes are handpicked and there is very little intervention in the cellar. The juice is fermented in old oak foudres and very little sulfur is added to the final product. You pick up some aromas from the carbonic maceration - strawberry, a little varnish - but then it is all about rhubarb marmalade, tangerine zest, dates, Mediterranean spices. It is tarter and a little dirtier on the finish, but over a week the palate cleaned and softened up. The tannins are ripe and gentle.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eNotes:\u003c\/strong\u003e Les Foulards Rouges \"Glaneurs\" comes from a single vineyard planted in 1970. It  is  100%  Grenache grown on  the decomposed granite hillside, giving yields of 15 hl\/ha. The name is a tribute to a French documentary made by Agnès Varda,\"Les Glaneurs et la Glaneuse\" (\"The Gleanears and I\" in the US.)  Hand-harvested, the grapes are chilled on arrival, then vinified 50% de-stemmed, 50% in whole-cluster carbonic, both macerated for 3 weeks with wild yeasts. The free run and press juices are blended, then the wine is aged for 6 months in used barels before being bottled by hand without any fining, filtration or SO2. \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eFood Pairing:\u003c\/strong\u003e Keep it 2-3 years or enjoy today slightly chilled in a medium-sized glass with a beet, arugula and hazelnut salad with raspberry vinegar dressing or a black lentils stew with Lebanese spices.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eThe Domain:\u003c\/strong\u003e For 12 years, Jean-François Nicq worked as a winemaker in the Côtes du Rhône. On the first of January 2001, Jean-François joined his childhood friend, Bijan Mohamadi (who had been spending his days as a math teacher like our friend Cyrill Sevin) to start a new domaine at the very southern end of the Languedoc. \"The Red Scarves\" is a literary reference to the works of Fréderic Fajardie, whom the men greatly admired. Their philosophy is in turn a militaristic one, completely against intervention in the vines or the cellar. Native yeasts, no fining, filtration, added sulfur, and even some tillage with the help of their mule, Uma: The real deal. The vineyards are composed of multiple plots, on the lower, flatter part are mostly decomposed sandier soil. On the hillside, 100 meters up, are isolated single plots: Frida, Les Vilains, Les Glaneurs, Grenache.
