This is a very fine edgy Chenin blanc. Ultra-pure, it is reticent with grapefruit, lemon rind and pith, spice, and stony minerality on the nose. The palate is marked by prominent saline mineral lemon juice acidity that while in your face (or mouth in this case!) is not out of balance. There is plenty of flavor behind the acidity – yellow florals, white anise, vanilla, clarified lemon juice, and green apple with a richness that lingers on with the long drawn-out acid finish. This is one for acid lovers and food.

Notes: The Anjou Blanc is produced from a two-hectare plot referred to as “Le Vent dans les Saules” (“the wind in the willows”) because of the willow trees next to the vineyard. Laurent’s grandfather planted the vineyard in the 1980s because the “old timers” remembered great wines coming from these soils. The soil is schist with fertile clay topsoil. Laurent allows the natural plants to grow between the rows which push the root system down into the schist and mitigates the rich topsoil’s effect on the vine. He has chosen a trellis system named “cordon bi-lateral” that yields very small berries.

The Domain: Domaine du Pas Saint Martin is set among troglodyte caves formed out of ancient fossilized marine life that covered the Saumur region 10 million years ago. The winery was officially started in the 1950s, though earlier generations of the Pellé family had produced wine even before then, selling barrels of wine to local Brasseries as far as Brouges in the early 20th century. Paul-Henry's grandfather, in fact, played an instrumental role in the establishment of the appellation and lobbied hard to include "Morogues" on the label, which he felt essential since it is unique in its high percentage of Kimmeridgian soils.

The majority of the estate's 40 Ha of vines are situated in and around the village of Morogues. As Paul-Henry explained, “Morogues is comprised of 90% Kimmeridgian limestone. This is why my grandfather pushed so hard to give it the status it deserved”. This limestone is the same blessed soil type that makes up great terroirs of Chablis, Chavignol, and parts of the Aube in Champagne. Whether with Sauvignon Blanc, Chardonnay, or Pinot Noir, it helps to create complex, elegant, mineral-laden wines that can age well too. The property is planted to 1/3 Pinot Noir and 2/3 Sauvignon Blanc, including 5 Ha of vines outside of Menetou, in Sancerre proper, which they purchased in the late 70s.

Paul-Henry Pellé took over for the family in 2007 and immediately converted to organic viticulture (though not officially certified yet). Prior to that, the family had taken a ‘natural¹ approach in the vineyards, working and plowing the soils and avoiding the use of herbicides and pesticides. Today, there is a crew of 8 full-time vineyard workers to work the soils and apply organic preps and compost. The most important wine production-wise is the Menetou-Salon Blanc “Morogues” which is made from 7 different hillside vineyards in the village of Morogues. In addition, they make three different “single-vineyard” wines from selected, highly distinctive parcels in Morogues – Le Blanchais, Le Carroir, and Vignes de Ratier. The grapes for all of these cuvées are hand-harvested, a major rarity in this part of the wine world.

The fermentations for the Menetou Morogues occur in a majority of tanks with about 15% in wood, both foudres, and 400-liter barrels, though there is a plan to increase the percent of wood élévage moving forward. The single-vineyard wines are raised in 70% wood – also foudres and 400L – with the balance in the tank. These wines are also fermented 100% with indigenous yeasts and are raised for a minimum of 11-12 months before bottling. Like the top wines from Chavignol, these wines drink well on release, but also have the ability to age beautifully for 10-15 years, often longer in top vintages.

We understand that Sancerre is just so easy to sell. But if you like great Sancerre (which itself can be a rarity!), we invite you to discover these distinctive, mineral-laden whites and reds from this under-the-radar appellation, Menetou-Salon, and from one of its true masters, Domaine Pellé.

Alcohol: 12%

Grape(s): Melon de Bourgogne

Localization: Loire Valley, France

Tasting Notes: The wine presents a smoky and minerally character on the nose, which parts to reveal orange pip and apricot stone. In his immaculate winery, Pierre proceeds to vinify in small batches according to the origin of the fruit. The harvest is done by hand, also a rarity in the region, to avoid any oxidation before pressing. There is an immediate light débourbage (separation of juice from gross lees), then a 4-week fermentation at 20 degrees, followed by 6 months (or longer for some cuvées) of aging in stainless-steel vats on fine lees. This is the classic Muscadet-sur-lie process, where the wine is kept on its lees, with a fair amount of CO2 as protection, until bottling in the spring following the harvest. The only modern technique used here is macération pelliculaire (maceration of lightly crushed berries before pressing), which varies in proportion according to the cuvées.

The family estate now consists of approximately 40ha, with 38ha planted to Melon de Bourgogne located about 20 kilometres from Nantes itself. The vines have a good age, 45 years on average although some are well into their seventh decade. Thierry’s parents were growers in the region, but Thierry had gone to Paris to fulfill a childhood dream of becoming a firefighter. Toward the end of his five-year employment contract he met Sophie, then a student, and she (or his infatuation with her) persuaded him to leave Paris and firefighting. He returned to Mareuil-sur-Cher to discover that the man who had bought his parents’ vines needed a vineyard manager. Thierry proposed himself, and his father stepped up to train him. Six years later, the young couple inherited seven acres of vines from Sophie’s grandfather. They took the vines without any thought of growing beyond them. Indeed, the original intent was to sell the grapes to a négociant, but then within weeks a retired grower got wind of the transaction and offered to sell them 25-acres of vines. Suddenly, the door was open to start a domaine. Thierry was game—but only if Sophie joined him on the adventure. (Until it was granted AOC status in 1937, Montlouis wines were under the Vouvray appellation.) The soils in both places are quite similar: sandy clay on a base of tuffeau. Some say that a slightly higher percentage of sand and pebbles in the Montlouis soil makes the wines somewhat leaner than the wines of Vouvray. For us, this trait adds to the charm of Montlouis's sec wines, giving them a lively crispness on the palate and outstanding minerality. François Chidaine has worked alongside his father Yves for many years, in two independent estates. He works his vines the old-fashioned way, but does not want any mention of organic viticulture on his bottles even though he is certified organic. He champions the Chenin Blanc grape and its ability to produce vibrant wines that age gracefully. Chidaine's estate is divided into 8 distinct plots, with much of the vineyards between 40 and 80 years old. Clos de Breuil is Chidaine's sec, or dry, cuvée of Montlouis, while Clos Habert and Tuffeaux are demi-sec, or off-dry cuvées. While Pascal Cotat's first passion may have been restoring old cars, wine—especially his family's Sauvignon Blanc—was a fast second.

No one can doubt that winemaking runs in the blood of the Cotat family. On the slopes of the Monts Damnés in Chavignol, the family has tended both Sauvignon Blanc and Pinot Noir since the end of the Second World War. It was only in the 1990s when two brothers, Paul and Francis, handed over the family domaine to their sons, François and Pascal, respectively. Today there are two Cotat domaines—one in Chavignol, headed by François, and one in Sancerre, run by Pascal. What sets these cousins apart is less important than what they share—a passion for natural winemaking and a truly amazing touch with Sauvignon Blanc.

Pascal believes in natural winemaking—the vast majority of his plots are cared for organically, often combining seaweed and other natural preparations to fertilize his vines. Harvest is never rushed; in fact, Pascal (as does his cousin François) harvests more than a week after every other winery in the region. Needless to say, extra maturity on the vine means extra body and complexity in the wine. Vineyards are located on very steep slopes, requiring a hand harvest that has become a bit of a pilgrimage for Cotat devotees. The steepest plots can only be worked by sliding down with a cushion tied to your rear while you hold the bucket in front of you. The cousins invented this amusing system, and pickers come from all over Europe every year to volunteer for the harvest.

Grapes from each vineyard plot are vinified separately. The Cotat family pioneered single-vineyard bottlings in Sancerre, and each terroir—whether “Les Monts Damnés” or “Grande Côte”—has its own unique personality. Soils share the same chalky heart as do those in Chablis. In general Pascal wines show a more luxurious, plush mouthfeel in combination with this balanced acidity. (François wines, in comparison, often show more flinty, Chablis-like notes.) Wines are always bottled unfined and unfiltered.

Cotat’s wines truly benefit from age.
