Always maintaining the indigenous varieties of Hondarrabi Zuri and Hondarrabi Beltza as the basis of their products. Ameztoi is five generations with the family tradition in the elaboration of Txakoli.\u003c\/p\u003e\n\u003cp\u003eAmeztoi is a long-standing txakoli producer based in the coastal village of Getaria in the province of Gipuzkoa (Basque Country). Five generations of the Ameztoi family have tended vines and made wines in the area.\u003c\/p\u003e\n\u003cp\u003eThey own 40 hectares of vineyards and rent an additional 10 hectares. Most of the plots enjoy fabulous sea views framed against the picturesque fishing village of Getaria. Two indigenous grape varieties are grown: the white Hondarrabi Zuri and the red Hondarrabi Beltza (zuri means white in Basque and beltza is red).\u003c\/p\u003e\n\u003cp\u003eAmeztoi has developed its own selection of yeasts. The style of the wines is in line with the majority in the DO Getariako Txakolina —low alcohol (usually between 10,5% and 11,5% vol.) with petillance, in contrast with txakoli from the neighboring provinces of Bizkaia and Álava, with barely a trace of carbon dioxide. Ameztoi keeps wines in hermetically sealed stainless steel tanks at 7ºC all year long to preserve the spritz.\u003c\/p\u003e\n\u003cp\u003eBeyond the traditional styles, the winery produces an oak-aged txakoli, Kirikilla Ameztoi (around €13), as well as a low alcohol white called Ameztoi 9.6, which we found of little interest given the presence of residual sugar.\u003c\/p\u003e\n\u003cp\u003eThe most original wine in the range is probably the rosé Ameztoi Rubentis (100,000 bottles, €8), with equal parts of Hondarrabi Zuri and Hondarrabi Beltza that are blended at the beginning of the winemaking process. Bunches undergo a short maceration before they are pressed. The wine displays the slightly wild, lively character of the red Hondarrabi Beltza variety. There is also the single-varietal red Ameztoi Stimatum. Alexis’ parents were working with this same cooperative until they decided to build a small winery, “le chai duchet” so that Alexis could produce estate-bottled wines. Before rejoining his parents, Alexis traveled extensively doing winemaking stints in unusual places such as Margaret River and Ontario Lake as well as closer to home in Meursault and the Savoie. Finally, after many years of pressing their case with the INAO, the growers of Viré decided to join forces with the growers in the neighboring village of Clessé to create a joined appellation. He grew up to know the country well and developed a deep knowledge and love for his native Oregon hills. It is this intuition that guides his farming, winegrowing, and vinification decisions. Despite this elevation, the slope collects heat during the day and is warmer the higher up the slope you go, then it all cools down at night. Stephen refuses to irrigate his vines, making them dig for their needs. The soils are cultivated in the tradition of pre-1940s agriculture. No outside fertilizers, synthetic or otherwise, are used. His methods are even more organic than what the certified organic rules require. The vineyard floor is intensively managed for an abundant life. This means letting the wild in while contributing species enhance vine health, insect habitat, and diversity. Returning livestock to this mix is essential: a flock of Katahdin\/Dorper crosses is the cornerstone of fertility management. The Hagens use intensive rotational grazing to cycle nutrients from diverse cover crops to the vines. Several years of this practice have led to a vineyard that needs no other fertilizer, creating wines that are truly site-specific. We are calling Antiquum organic here above in the icons, but this estate is beyond organic, and even beyond biodynamic the way that Hagen is farming and creating wine.
